Fried Pancake Apples
These are the perfect autumn comfort food - think if apple pie and breakfast had a baby. So good! the method is simple.
Ingredients:
2 apples
1 cup Jiffy pancake mix
1/2 cup water
1-1/2 tablespoons Alden Mill House Pumpkin Spice seasoning
1/4 cup butter
1/4 cup Alden Mill House Cinnamon Sugar
Slice your apples into rings. remove the cores with a small cookie cutter or manually. You should have 8-10 rings.
Mix your pancake batter according to the box instructions, but add in the pumpkin pie spice.
Heat your butter in a cast iron skillet (or similar) frying pan until bubbly.
Dip the apple slices in the pancake batter so they are completely covered and place them gently in the pan. I did these in two batches.
Fry until both sides ar golden brown.
Remove from pan and immediately dip them in cinnamon sugar. I put mine on a bread and butter dish.
Serve with a drizzle of Witt's Maple Syrup. A scoop of vanilla ice cream would also be delightful!
